The baker shapes it into balls ready to roll out flat for baking in the tandoor oven. After he rolls it out, he’ll score it and flip it onto the padded mitt that you can see by the oven.
Next, he’ll plaster the dough onto the inside walls of the hot oven, with the mitt protecting his hand. The fresh warm flatbread is brought to every table as it comes out of the oven.
